Dustin Hoffman is the father of this generation of chameleons. At 30 he had his breakout role as 18 year old Benjamin in "The Graduate". He followed with many memorable performances that include "Midnight Cowboy", "Lenny", "Little Big Man", "Marathon Man", and "Tootsie". He won Oscars for "Kramer vs. Kramer" and "Rain Man". He wasn't a leading man type, like his co-star in "All the President's Men", but his career has stayed strong and vital through his many incarnations on the screen.
